Once considered a trash fish, Pacific hake has received a lucrative make-over and is now one of Oregon's top commercial catches. It's name was changed to Pacific whiting, and new processing methods allowed new uses for the fish. At the same time, Asia began clamoring for surimi, a multi-purpose processed fish product used to make imitation crab and other foods.
