Beth Federici is the filmmaker and film instructor behind the documentary “James Beard: America’s First Foodie.” Kathleen Squires is a nationally recognized food and travel journalist who co-produced the James Beard documentary. And our special guest, Vitaly Paley, is chef and owner at the restaurants Paley’s Place, Imperial (where we recorded this episode), The Crown, and Headwaters, all in Portland, Oregon.
