During the 2018 Oregon Truffle Festival, our special guest Chef Vitaly Paley and cookbook author Ivy Manning give us the inside scoop on how pros source and work with these mysterious tubers, and filmmakers Beth Federici and Kathleen Squires tell us about food legend James Beard’s love of truffles.

Meet our panelists: Ivy Manning is a food writer and the author of seven cookbooks. Beth Federici is the filmmaker and film instructor behind the documentary “James Beard: America’s First Foodie.” Kathleen Squires is a nationally recognized food and travel journalist who co-produced the James Beard documentary. And our special guest, Vitaly Paley, is chef and owner at the restaurants Paley’s Place, Imperial (where we recorded this episode), The Crown, and Headwaters, all in Portland, Oregon. Our host is Katherine Cole.
