Surimi School At Oregon State University's Sea Food Lab
Jae Park run <a href="http://surimischool.org/" target="_blank">OSU Surimi School</a>, part of the university's <a href="http://osuseafoodlab.oregonstate.edu/" target="_blank">Seafood Lab</a> in Astoria, gave us a tour — and some samples of the food you can make with processed fish protein — otherwise known as surimi — from noodles and fish cakes to pizza dough.
